Preparation time: 30 min maceration: 1/2 h + 12 h Cooking time: 40-50 min
For 2 to 3 pots of 500g.
1 kg of cherries
800 g of granulated sugar
25/30 fresh mint leaves
1 know for jam gelling
Wash and pitted cherries put them in a bowl, add half the sugar.
Put the mint leaves in 25 cl of boiling water infuse 1/2 h and pour over the cherries.
Let macerate 12 hours, remove the mint leaves, drain the cherries.
Boil the juice maceration, hold 30 to 45 minutes at a simmer.
Add cherries pour know gelling agent for jam and boil 1 minute.
Then add the remaining sugar, boil again 5 min.
Skim, put in jars immediately.
