Chicken tagine with herbs and tomatoes

Chicken tagine with herbs and tomatoes
For 2 people

 

Ingredients:
• 500 g boneless chicken breasts without the skin, cut into thin strips
• 2 sliced leeks
• 125 g mushrooms
• 100 g dried tomatoes in oil and minced
• 3 tablespoons lemon juice
• 2 tablespoons vinegar
• ½ teaspoon pepper
• 1 tablespoon of basil
• 1 tablespoon parsley

Preparation:
In a wok, heat the oil and fry the chicken strips to fire heat for 3 minutes. Remove and reserve in a bowl. Make heat again oil, saute the leeks, dried tomatoes and mushrooms 2 min. Add the vinegar, lemon juice, pepper and herbs. Bring to the boil and simmer until thickened slightly. Return the chicken to the wok, stir well and reheat for 1 or 2 min.
