For 4 people



2 kg of fresh spinach in branches
10 cl of argan oil
1 bunch parsley
1 bunch coriander
1 garlic clove
1 pinch saffron threads
1 pinch of cumin
1 pinch of paprika
1 preserved lemon
250 g fresh tomato
200 g of red olives
Salt and black pepper

Rinse spinach under running water, chop coarsely. Bake with steam for about ten minutes and let cool. Squeeze the spinach in your hands to extract the most juice.

Prepare the charmoula: in a sauté pan, pour argan oil, cilantro parsley, crushed garlic, salt, pepper, saffron, cumin, paprika and diced candied lemon. Simmer on the stove, stirring.

Mondez 200 g of tomatoes by immersing them in boiling water. Remove the seeds from them and then chop and red olives.

When charmoula is reduced him add the diced tomatoes. Melt the tomatoes about 5 minutes on the heat, stirring. Next, add the chopped spinach in Chermoula. Sauté one minute on high heat, stirring. Add to the last moment chopped olives.
